Technically speaking, almost any Ranma/Nabiki or Ranma/Kasumi match would fit that line of requirements.
The problem with such approaches is really twofold. anyone engaged to Ranma must normally be able to survive his exploits, and also, while 'normal', must still have some appeal for both a reader and writer interest.
Here is one that was attempting to go in that direction, if you streach the definition of normal, though it stalled:

What of normal alien girls, such as Amane Calnok (sp?) Mihoshi Kurimitsu, or Kiyone Makibi from Tenchi? While aliens, they are fairly normal physically for their respective race with no real powers per se. Several Ranma/Tenchi crossovers match them up.
Likewise, Asuka from Neon Genesis. Outside her Evangelion units, there is really nothing unusual about her physically, spiritually, or in way of martial arts abilities.
I do recall coming across a Ranma one once where he left and went to California, and while there in school started dating a classmate. She was perfectly normal. I think it had some 11 chapters, but cannot remember the name.
