Sabbat-chan would be another fiancee, or something, with different methods of tryinfg to reinforce Shinji's mental stability. Not quiete pleasant ones.
Dokuro decides that him having a fiancee would be better positive reinforcment and went of on her own.

Dokuro-chan and her like are Angelic Enforcers. They are angels sent out to assassinate people that heaven thinks need to go. They each have a special magic weapon. In Dokuro's case, it's a heavy, spiked baseball bat called Excaliborg.

Dokuro-chan's weapon is commonly referred to as an Oni warclub. Oni are often depicted using them in folklore.
Just a tidbit.
Also, the correct spelling is 'Excalibolg', since it was named after two weapons of British lore, Arthur's Excalibur and Cu Chulainn's Gae Bolg.

Here's a possible way to end a Ranma Omake of this cross.

So basically, she'd go around randomly killing, reviving and traumatizing all of Nerima, while Ranma looked on with the same expression of someone watching a particularly horrifying train wreck.

Despite the idea that they wouldn't stay dead, since none of 'em are the official target, I can't see Ranma being gleeful over the the amount of gore and spattered body parts that accompany Dokuro's momentary lapses in judgment. He'd be horrified.
Does raise the question of whether he'd feel obligated to try and get her to tone it down and be less lethal. That would be interesting, since he'd be fighting an uphill battle against her primal nature; she was created to be an assassin, so training about how not to kill would be unnatural for her.

The Ranma idea was similar, it's just that she can't seem to kill him, but everyone else gets killed once.

Plus let's face it; Ranma couldn't be mean to a girl if he tried ... aside from Akane. Shampoo tried to kill him and Akane, but they're okay now. I doubt he will be too upset with Dokuro-chan.

As to your Shinji/Dokuro pairing... I agree a litle longer, but I rarely read Eva fanfics so I can't give advise there. Perhaps a scene where she takes out an Angel then tears out Shinji's plug from 01 and glomps him, and of course a dokuro-chan follow-up. Looks good anyway.

Now that I've finished watching all four eps of Dokuro-chan, I can safely add in a few things to help with the next serving of this delightful story...
The whole fiancee thing could be Kami-sama's way of thanking Shinji for the whole way he handles Third Impact and how he gives everybody the choice whether to remain as LCL or come back and live life on earth. Considering that Dokuro-chan may be a bit... impulsive when it comes to certain matters of the heart, He also sends two more candidates to woo the Third Child. They are Sabato-chan and Zakuro-chan (Dokuro-chan's younger sister who strangely looks and acts like an older sister instead). I would appreciate seeing Zakuro-chan at the least for some crazy sibling rivalry over Shinji-kun.

Here's a thought. One night at the appartment, Misato is sitting at the kitchen table with Pen-Pen getting smashed and laughing her ass off as she watches Dokuro-chan kill Shinji. Everytime Dokuro-chan revives Shinji, Misato makes some sort of sexual innuendo towards Shinji, causing the Shin-man to sputter in denial, which makes Dokuro-chan think that he IS being a pervert, thus wacking him into a fine paste; thus starting the whole cycle all over again.
In other words, fun for the whole family....
